Most of the people's breakfast in south India is Idli or Dosa. The best combination/dip to eat Idli or Dosa is with chutney or sambar. There are two types of chutnies, coconut chutney and peanut chutney. We cannot find coconut all the time so the alternative is peanut chutney. My brother and I love to eat Idli because of our mom's peanut chutney. Today I am going to show you how to make the world's best peanut chutney.
Ingredients:
100 grams of peanuts
2 to 4 green chilies
1spoon cumin seeds
2 garlic gloves
1 gram tamarind
1/2 spoon channa dal
1/2 spoon mustard seeds
3 spoons oil
4 curry leaves
Salt to taste
Sugar one spoon (optional)
Method:
1. Take a small pan add one spoon oil to the peanuts, add green chilies and roast it for 10 minutes or until the peanuts turn brown in color.
2. After that cool it for 10 minutes. Transfer peanuts and green chilies to food processor add cumin seeds, garlic gloves, salt, tamarind and sugar (optional). Sugar will enhance the taste of peanuts.
3. Here is the technique to make soft paste. First add very little water to break peanuts then add little more water and blend it to make normal paste then add more water to get the right consistency of a fine paste. If you pour all the water in the beginning you won't get the right consistency.
4. Then take a small pan add 2 spoons of oil. After oil heats up add channa dal, mustard seeds and curry leaves. After the mix is roasted well pour it on top of the chutney. That's it, peanut chutney is ready.
5. Enjoy it with Idli or Dosa.
